Hot Cross Biscuits


Makes 18-20, 20 minutes preparation, 10-12 minutes cooking

Our tasty Hot Cross Biscuits take all the flavours of the traditional Easter buns and to create a modern twist that you can enjoy with a cuppa or give as tasty homemade Easter gifts.

250g Plain Flour; 200g Softened Butter (plus extra to grease the baking trays); 100g light brown sugar; 1 Egg; 1tsp Cinnamon; 2tsp Baking Powder; 100g Raisins or Sultanas; 200g White Chocolate Chips

1. Preheat your oven to 180˚C then lightly butter a few baking trays.
2. In a large mixing bowl beat together the softened butter, egg and sugar until you have a smooth mixture. Add the flour, baking powder and cinnamon to the bowl then combine everything together to make a dough. Once you have a smooth dough, add the sultanas or raisins and 100g of the white chocolate to the bowl and mix again to combine.
3. Roll the dough into golf ball-sized lumps then place onto the greased baking trays and gently flatten being sure to leave enough space between each for them to expand. Next, bake for 10 minutes until lightly golden then remove the cookies from the trays and cool on wire racks.
4. Whilst the cookies cool, break the white chocolate into a heatproof bowl then melt by heating in your microwave on Low in 20-second bursts until melted. Using a teaspoon (or a small piping bag) carefully drizzle a cross on top of each cookie to make them look like a hot cross buns and leave to set before eating.
Top tip: The cookies can be frozen for a couple of months in the uncooked dough stage. Once cooked they can be stored in a cookie jar for up to 3 days.
